Exploring Our Roots: A Journey Through Etouffee To Geaux’s History

Our family’s history has deep roots in Lafourche Parish. Growing up in the bayou, one of the first things we learned was how to cook. As kids if we were not in the kitchen, we were in the bayous catching some of the best seafood in the world.

Our parents taught us how to live off the many bounties that the heavens have given us. Whether it was fishing, trawling, or crabbing; we used techniques handed down from our previous generation to reel in our catch.      

As the years have passed, we continue to fight to preserve our history from coastal erosion and hurricanes. And now that we have moved “up the bayou” we are excited to share our family recipes here on the Northshore.  It all started in 2020 when The Callais Family set out on a culinary adventure with a vision to redefine real Cajun cuisine in Covington.   With sheer passion and dedication, they transformed a humble space into what would soon become a beloved culinary destination. 

Over the years, we've evolved with the times, embracing new trends while staying true to our core values. Whether it's expanding our offerings or renovating our space, each step forward is guided by our unwavering commitment to excellence.

Behind every dish is a story, and behind every story, a dedicated team of culinary visionaries. 

As we reflect on our journey thus far, we extend our deepest gratitude to our cherished patrons who have been an integral part of our story. Here's to many more years of culinary delight and shared memories!
